To say we love goat cheese in this house is an understatement. My oldest and youngest both take it in their lunches for school with pita chips. To make the goat cheese easily spreadable, make sure you take it out of the refrigerator to get it to room temperature.

Creamy Gruyere Mac and Cheese

Do not use pre-shredded cheese if you don’t have to! It has a coating on it that doesn’t melt as well.  Shred your own cheese - I promise it’s worth the extra step!
