Ingredients

¼ olive oil plus 2 tablespoons
2 teaspoons garlic, minced
2 cups cherry tomatoes, cut in half
1 teaspoon oregano
1 tablespoon basil
½ cup dry red wine
2 tablespoons balsamic vinegar
4-6 ounces goat cheese
French bread baguette, sliced
Salt and pepper to taste
To say we love goat cheese in this house is an understatement. My oldest and youngest both take it in their lunches for school with pita chips. To make the goat cheese easily spreadable, make sure you take it out of the refrigerator to get it to room temperature.

Instructions

1.Preheat oven to 450°.
2.Slice cherry tomatoes in half and add to mixing bowl. Season well with salt and pepper, garlic, oregano and basil. Mix well.
3.Add olive oil, balsamic vinegar and red wine to the mixing bowl and mix together.
4.Place tomato mixture into an oven safe baking dish and roast in your preheated oven for about 30 minutes. The tomatoes should start to blister and char by then.
5.While the tomatoes are in the oven, you can start getting the baguettes ready by slicing it and brushing each piece with a little olive oil.
6.Place your baguette slices on a baking sheet and toast in the oven until golden brown, about 3-5 minutes. You can wait to toast your bread until your tomatoes are done, if needed.
7.Once the tomatoes and baguette slices are ready, it’s time to assemble! Layer each baguette with a generous portion of goat cheese (Come on...it’s goat cheese!) and then top it off with you tomato mixture. Top with fresh basil (optional) and serve immediately.

Notes

  • Make sure you take your goat cheese out of the refrigerator so it can get to room temperature. Go ahead and take it out when you pop your tomatoes in the oven. It will be so much easier to spread if it is at room temperature.
  • Both cherry and grape tomatoes work great, so whatever you have, use it!
  • Make extra tomatoes. We like to have them on grilled cheese sandwiches, added to salads or use them to make an easy pasta sauce with them.
  • You can use fresh or dried herbs in the tomato mixture – both work great.
  • To say we love goat cheese in this house is an understatement. My oldest and youngest both take it in their lunches for school with pita chips. We like a lot of it on each piece, but feel free to use as much or as little as you and your family like!
  • Try it with herbed goat cheese, too. So good.
