Ingredients

¼ olive oil plus 2 tablespoons
2 teaspoons garlic, minced (optional)
2 cups cherry tomatoes, cut in half
8 slices bacon, cooked
¼ cup mayonnaise
¼ sour cream
Juice of ½ of a lemon
French bread baguette, sliced
Salt and pepper to taste
This is a crowd pleaser so if you make them for a party, be prepared to make them again by request!

Instructions

1.Preheat oven to 350°.
2.Cook bacon and set aside on a paper towel-lined plate. Cut each piece in half.
3.Slice the French bread into baguettes and brush each piece with a little olive oil.
4.Place your baguette slices on a baking sheet and toast in the oven until golden brown, about 2-4 minutes.
5.Slice cherry tomatoes in half and add to small mixing bowl. Mix with olive oil and salt to taste.
6.In another small mixing bowl, add mayonnaise, sour cream, lemon juice and garlic (if using) and mix until aioli is smooth and well-blended.
7.You can either spread the avocado onto the baguette or you can dice up the avocado...your call.
8.Layer each baguette with the lemon aioli and top with a layer of avocado; then, a layer of tomatoes. Top each baguette off with a piece of bacon and serve immediately.

Notes

  • Both cherry and grape tomatoes work great, so whatever you have, use it!
  • You can certainly make this with no aioli but why? It really adds a lot of flavor, and come on, who wants a BLT with no mayo?
  • Place each piece of bacon right on top – it looks great and also ensures bacon in every bite.
  • No bacon? Just use bacon pieces if you have them.  I would still crisp them up, though.
  • This is a crowd pleaser, so if you make them for a party, be prepared to make them again by request!
