Ingredients

COOKIES:
¾ cup unsalted butter softened (1 ½ sticks)
½ cup brown sugar
½ cup sugar
1 egg
2 tablespoons vanilla extract
2 cups all-purpose flour
2 teaspoons cornstarch
1 teaspoon baking soda
¼ teaspoon salt
CREAM CHEESE FROSTING:
1 8 ounce block cream cheese, softened
1 ¼ cup powdered sugar
2 teaspoons vanilla extract
TOPPING:
Sugar
These cookies are a game changer, like soft little heavenly bites! Understand, they are so good that you will 100% be asked to bake them over and over again!

Instructions

1.Preheat oven to 350° and line two cookie sheets with parchment paper.
2.Using a stand mixer, cream the butter until smooth. Add both the sugar and brown sugar and mix until combined. Mix in the egg and vanilla.
3.In a separate bowl, sift the flour, cornstarch, baking soda and salt. Once sifted together, add the dry ingredients to the wet ingredients and mix well until everything is combined. A thick dough will form.
4.Use a small cookie scoop. Place scoops of the dough onto the cookie sheets. Lightly press eachscoop of cookie dough to flatten. Bake 10-12 minutes until done.
5.Let cool on the cookie sheets for about 5 minutes before putting them on a cooling rack or into an airtight container.
6.ICING:
7.In a stand mixer, beat the cream cheese until smooth. Add the powdered sugar and vanilla extract and mix until everything is combined and smooth.
8.Pour sugar onto a small plate or bowl.
9.Spread the icing onto each cookie. Dip the top of the cookie into the sugar. Repeat until all the cookies are done.
10.Using a kitchen torch, brulee the top of each cookie until the sugar is caramelized.

Notes

  • These cookies are a game changer, like soft little heavenly bites! Understand, they are so good you will 100% be asked to bake them over and over again!
  • You can put the cookies onto a cooling rack after cooling on the baking sheet, but I find that they stay softer for longer if you put them into an airtight container right away.
  • Be sure to line parchment or wax paper in between every layer to help prevent sticking when storing the cookies.
  • These are sweet cookies with sweet icing – if you want them a little less sweet, just add ¼ teaspoon of salt to the icing mixture.
