Ingredients

1 pint grape or cherry tomatoes, diced
1 small red onion, chopped
½ jalapeno, seeded and minced (optional)
½ cup cilantro, chopped
1-2 cloves of garlic, minced (optional)
2-3 tablespoons fresh lime juice (likely 1 small lime)
Dash of salt
Dash of pepper
Full disclosure, I could eat Mexican food 7 days a week. Like, I love it a lot!  We make some version of it in our house at least once a week!

Instructions

1.Add tomatoes, red onion, jalapeno, chopped cilantro and minced garlic to a medium bowl and mix well.
2.Stir in lime juice and season with salt and pepper to taste.
3.Serve with your favorite chips or use as a topping for tacos.

Notes

  • Full disclosure, I could eat Mexican food 7 days a week. Like, I love it a lot!  We make some version of it in our house at least once a week!
  • You can use any kind of tomatoes you want here – I just really like cherry tomatoes. Roma tomatoes work really well, too.
  • I sometimes like to add chopped green onion.
  • This is really just so nice and fresh and perfect with tortilla chips. We also love to use it as a topping for tacos, quesadillas and even on top of our favorite white queso.
