- Full disclosure, I could eat Mexican food 7 days a week. Like, I love it a lot! We make some version of it in our house at least once a week!
- You can use any kind of tomatoes you want here – I just really like cherry tomatoes. Roma tomatoes work really well, too.
- I sometimes like to add chopped green onion.
- This is really just so nice and fresh and perfect with tortilla chips. We also love to use it as a topping for tacos, quesadillas and even on top of our favorite white queso.
