Ingredients

1 container of sour cream, (You can use Greek yogurt if you prefer.)
½ English cucumber, grated
1 garlic clove, pressed
3 tablespoons extra virgin olive oil
3 tablespoons lemon juice, freshly squeezed
2 tablespoons lemon zest, grated
4 tablespoons fresh dill, chopped
1 tablespoon sea salt
This is an absolute staple in our house. We love Mediterranean food and eat a lot of it, and this is a must. It is extra delicious the next day after everything has had time to mesh together.

Instructions

1.Grate cucumber and drain all excess liquid.
2.In medium-sized bowl, mix all ingredients together.
3.Add additional salt and olive oil to taste.
4.Cover and chill in the refrigerator for at least 2 hours before serving.

Notes

  • This is an absolute staple in our house. We love Mediterranean food and eat a lot of it, and this is a must.  It is extra delicious the next day after everything has had time to mesh together.
  • Garlic-loving household here, so we add an additional clove or two.
  • Add as much dill as you want – it’s delicious and adds tons of flavor.
  • Make sure you let this chill for a while – it tastes so much better when it has time to mesh.
  • Best served with warm pita and vegetables.
