Ingredients

2 14 ounce cans/jars artichoke hearts, drained and chopped
¾ cup grated Parmesan cheese
¾ mayonnaise
1-2 tablespoon fresh lemon juice
1-2 garlic cloves, minced
1 teaspoon pepper
Pita bread, sliced baguettes or crackers for serving
My kids won’t eat artichokes, but they LOVE this dip. It’s so creamy and delicious. Serve it with whatever you want; we like baguettes best.

Instructions

1.Preheat oven to 375°.
2.In a large bowl, combine the chopped artichoke hearts, Parmesan cheese, mayonnaise, lemon juice, garlic and pepper. Mix until it is all combined.
3.Pour mixture into an oven-safe baking dish.
4.Bake for 20-25 minutes or until bubbly and golden brown.
5.Serve with warm pita bread, sliced baguettes or crackers.

Notes

  • My kids won’t eat artichokes, but they LOVE this dip. It’s so creamy and delicious that it’s hard not to!
  • You can add less or more garlic, depending on your personal taste.
  • Serve it with whatever you want – we like the baguettes best.
  • If you have extra, turn them into a crostini! Top a lightly toasted baguette with the mixture and bake at 350° until golden brown on top.  Finish it off with a little parmesan cheese, and enjoy!
