Ingredients

2 large heirloom tomatoes large, sliced, or one pint cherry tomatoes sliced in half
1/2 red onion small, thinly sliced
1/2 cup feta cheese. broken up
1 tablespoon dill, chopped
1 tablespoon mint, chopped
3 tablespoon olive oil extra virgin
2 tablespoon red wine vinegar
1/2 teaspoon kosher salt
1/4 teaspoon freshly grounded black pepper
Easy, quick, healthy and delicious. Perfect side for a weeknight meal.

Instructions

1.In a medium bowl, combine tomatoes, red onions, dill, mint and feta.
2.Combine olive oil, red wine vinegar, salt and pepper in a mason jar. Shake to mix well and pour over the salad. Serve immediately.

Notes

  • Easy, quick, healthy and delicious. Perfect side for a weeknight meal.
  • Use any kind of tomatoes you have. Just cut them into bite-size pieces.
  • I like to use either red onions or shallots and cut them into small slices.
