Ingredients

4 ears of corn, roasted and cut off the cob
1-2 avocados, diced
½ cup of red onion, finely diced
1-2 limes, juiced
1 tablespoon avocado oil
¼ cilantro, chopped
½ cup feta cheese, optional
Salt to taste
I’m not going to act like this always makes it to the table! Sometimes, we just eat it with tortilla chips and enjoy it as a snack or appetizer.

Instructions

1.Combine corn, avocado and red onion in a medium bowl.
2.Add the lime juice and olive oil and toss well.
3.Mix in the cilantro and feta, both optional and add salt to taste.
4.Chill until ready to serve.

Notes

  • We like lime a lot, so we use 2 limes. Add one and taste; add more until it is to your liking.
  • Feta and cilantro are completely optional, but boy, do they add a lot to this dish.
  • Do not skimp on the red onions! They are so good in this. I have used green onions when I didn’t have red ones, and it was really good, too!
  • This works as a dip, a side to your favorite Mexican dish or on a salad. You name it. It works.
