Ingredients

1 cup bulgar
1 ⅔ cups boiling water
½ cup olive oil
⅓ cup fresh lemon juice
1 cup green onion, chopped
1 cup fresh parsley, chopped
¼ cup fresh mint, chopped
1 pint grape tomatoes, diced
1 English cucumber, diced
This is so good. Like all-you-will-want-to-eat-for-lunch-all-week good.  Even my littles love this.  They especially love to add avocado to it - chop one up and throw it in.

Instructions

1.Cook bulgar according to package, making sure to rinse thoroughly before cooking. Cool to room temperature before adding to bowl.
2.In a large bowl mix green onion, parsley, mint, tomato and cucumber. Add cooled bulgar, olive oil and lemon juice to the bowl. Mix well.
3.Add salt and pepper to taste.

Notes

  • This is so good. Like all-you-will-want-to-eat-for-lunch-all-week good.  Even my littles love this.  They especially love to add avocado to it – chop one up and throw it in.
  • I love lemon, so I tend to add extra, but you do you!
  • Pairs great with Middle Eastern Chicken kabobs.
  • Make it a platter and serve it with warm pita, hummus and tzatziki sauce.
