Ingredients

2-3 bulbs of garlic
1-2 tablespoons olive oil
1 teaspoon kosher salt
2-3 pieces of fresh basil (optional)
Honestly, just make this so your house smells like your favorite Italian restaurant. It’s perfect to roast on a Sunday afternoon and eat with a Sunday family dinner.

Instructions

1.Preheat oven to 400°.
2.Peel off some of the outer layers from the heads of garlic, but make sire to leave enough to hold the garlic cloves together.
3.Slice off the top of each head of garlic, so that all the individual cloves are exposed.
4.Place each head of garlic on a piece of aluminum foil, cut side up, and drizzle each with olive oil and a pinch of salt. If using basil, tear the basil leaves and place them on the foil with the garlic.
5.Wrap the garlic loosely with the foil and place on baking sheet.
6.Cook for about 45-50 minutes, until the garlic is completely softened.
7.Let it cool; then squeeze the garlic into an airtight container and store in the refrigerator.

Notes

  • Herbs are completely optional. This is perfectly delicious on its own.  We prefer to use basil if we have some, but other herbs such as rosemary, oregano or thyme work great, too.
  • Make sure to wrap each head of garlic separately in the foil. It helps everything cook evenly.
  • You can use this in so many other recipes. We like to use it as a spread for our bread and serve it with a nice Italian dinner.  You can also use it for dips, mashed potatoes, mac and cheese – anything you want!
