Ingredients

1 ¼ cup all-purpose flour
2/3 cup sugar
½ teaspoon baking powder
¼ teaspoon baking soda
¼ teaspoon salt
2/3 cup olive oil
½ greek yogurt
2 eggs
2 teaspoons vanilla extract
3 tablespoons lemon juice
Zest of one lemon
An olive oil cake is very light and moist. It comes together very quickly and is very easy to make.

Instructions

1.Preheat oven to 350° and prepare your cake pans by using cooking spray, greasing them with butter or lining them with parchment paper. You can add flour, but make sure to shake off any excess.
2.Sift flour, sugar, baking powder, baking soda and salt into a large bowl.
3.Make a well in the dry ingredients and add the olive oil, yogurt, eggs and vanilla into the well. Whisk everything together until combined.
4.Add the lemon juice and zest. Whisk until there are no clumps.
5.Pour the batter into the prepared pans and bake for about 30-35 minutes. When the cakes are cooled, top with your favorite icing or fresh fruit.
