Ingredients

1 ¼ cup unsalted butter softened
¾ cup brown sugar
½ cup sugar
1 egg
1 teaspoon vanilla
1 ½ cup all-purpose flour
1 teaspoon baking soda
2 teaspoons cinnamon
½ teaspoon salt
¼ teaspoon ground nutmeg
3 cups uncooked oats
These cookies are soft, chewy and so easy to make – which is a good since they won’t last long!

Instructions

1.Preheat the oven to 375°. Line your baking sheets with parchment paper.
2.In a stand mixer, beat butter, brown sugar and sugar until creamy. Add in the egg and vanilla.
3.In a separate bowl, sift flour, baking soda, cinnamon, salt and nutmeg together. Add the wet ingredients to the sifted dry ingredients. Stir until combined, add in the oats.
4.Using a cookie scoop, scoop the batter onto the baking sheets lined with parchment paper.
5.Bake for 8-10 minutes.
6.Leave the cookies on the baking sheet to cool for 5 minutes before placing into an air-tight container.

Notes

  • These cookies are soft, chewy and so easy to make – which is good since they won’t last long!
  • Don’t let the cookies cool too long on the baking sheet or else they will start to harden.
  • Do not use a cooling rack, or they won’t be soft and chewy.
  • You can add raisins, walnuts or chocolate chips to the batter to mix things up a bit – the possibilities are endless!
