Ingredients

1 lb chicken, breasts or thighs
¼ cup olive oil
2-3 garlic cloves, finely minced
1 Tablespoon cumin
1 Tablespoon paprika
1 tablespoon onion powder
1 teaspoon cinnamon
1 teaspoon salt
1 teaspoon pepper
1 small red onion, thinly sliced
½ cup cherry or grape tomatoes, halved
Hummus
Dill, chopped
Crumbled feta
Pitas
Tzatziki sauce, homemade or store bought
A light and delicious meal that packs a ton of flavor. Quick and easy to pull together making it a perfect weeknight meal.

Instructions

1.Add chicken to a large bowl. Add olive oil, garlic, cumin, paprika, onion powder, cinnamon, salt and pepper and mix until all the chicken is coated with the marinade. Cover and let sit in the refrigerator for at least 30 minutes.
2.While the chicken is marinading, cut your tomatoes in half, thinly slice your red onion and chop the dill.
3.Once your chicken is ready, heat your grill to about 450 degrees. Cook chicken heat until cooked through, about 5-7 minutes per side.
4.Remove chicken from the heat and let rest about 5 -10 minutes and the slice into thin strips or bite size pieces.
5.Heat pita bread over grill or stove top. Add a layer of hummus, tzatziki and chicken then add your desired toppings such as tomatoes, red onions, feta and dill. Enjoy!

Notes

  • Pairs great with my Tzatziki recipe but you can also use store bought.
  • Add or omit anything you like here.  I usually add more paprika and sometimes garam marsala to my chicken marinade.
  • I like to pair with my Cucumber Tomato Salad.
  • Make it your own! Top with anything you like such as cucumbers, avocados, chick peas, olives, lettuce, spinach or any fresh herbs you have on hand. The possibilities are endless!
  • Make it even easier and use rotisserie chicken.  Just add the spices and olive oil to the already cooked chicken and heat.
