Ingredients

¾ cup unsalted butter, room temperature
3 cups powdered sugar
Juice from ½ lemon
Zest from half a lemon
2-3 tablespoons heavy cream
2 teaspoons vanilla extract
Pinch of salt

Instructions

1.Using a stand mixer, beat the butter until fluffy. Add powdered sugar and mix until combined.
2.Add heavy cream, vanilla and salt to the mixer.
3.Add lemon juice and lemon zest.
4.Beat on medium for 2 minutes; then on high for another 2 minutes; finally on medium for 1 minute.

  • Delightfully light and refreshing. Use the juice from a whole lemon if you want a stronger, tarter lemon flavor.
  • Easy to make ahead and store in an airtight container until ready to use.
