Ingredients

2 tablespoons olive oil
1 small onion, diced
3 garlic cloves, minced
1 container chopped frozen spinach, thawed and drained
½ cup milk
8 ounces cream cheese
3-4 dashes Worcestershire sauce
3-4 dashes hot sauce
3/4 cup shredded mozzarella cheese
Salt and pepper to taste
Sliced baguettes, crackers or tortilla chips
Make this ahead of time and store it in the refrigerator. Take the dish out of the fridge and allow it to get to room temperature before you bake it.

Instructions

1.Preheat oven to 400°.
2.In a large pot, heat oil over medium heat. Add onion and cook 4-6 minutes or until softened. Add garlic and cook another 60 seconds.
3.Add spinach and cook for about 2 minutes.
4.Transfer to colander and strain out any excess liquids.
5.In the same pot, warm milk over medium high heat. Whisk in cream cheese and continue to whisk until well-blended and smooth.
6.Add the spinach mixture into the milk and cream cheese and mix well.
7.Add the Worcestershire sauce, hot sauce and ½ cup of mozzarella; mix until all ingredients are well-combined.
8.Season with salt and pepper.
9.Pour mixture into a baking dish and top with remaining mozzarella cheese. Bake for 20-25 minutes or until bubbly and golden brown.

Notes

  • Don’t like hot sauce? Leave it out! Love some extra heat? Add as much as you want!
  • You can make this ahead of time and store it in the refrigerator until ready to bake. Make sure to take the dish out of the refrigerator and allow it to get to room temperature before you bake it. Otherwise, you may need to allow additional baking time.
  • I like to serve mine with a sliced baguette, but your favorite cracker or tortilla chips taste just as good.
