Ingredients

1 1/4 pounds shrimp - peeled
salt and pepper to taste
1/3 cup cornstarch
2 eggs, beaten
3 tablespoons vegetable oil
1/3 cup buffalo hot sauce
1/2 cup brown sugar
1 tablespoon rice vinegar
1/4 teaspoon red pepper flakes or more to taste
1/4 cup sliced green onions
cooking spray
These are just plain delicious. Easy to make, which is good, as you will be asked to make these over and over again.

Instructions

1.Preheat the oven to 350°. Coat a 9x13 pan with cooking spray.
2.Place the shrimp on a plate and season with salt and pepper to taste. Sprinkle cornstarch over the shrimp and toss to coat evenly.
3.Dip each piece of shrimp into the beaten eggs.
4.Heat the oil over high heat in a large skillet. Place the shrimp in a single layer and cook for 1-2 minutes on each side or until golden brown. You may have to work in batches.
5.Place the cooked shrimp in a single layer on the 9x13 pan.
6.In a small bowl, whisk buffalo sauce, brown sugar, rice vinegar and red pepper flakes.
7.Pour sauce over the shrimp and toss well to make sure all the shrimp is evenly coated. Bake for 15 minutes, stirring once halfway through.
8.Top with green onions and serve.

Notes

  • These are just plain delicious. Easy to make, which is good, as you will be asked to make these over and over again.
  • You can make these as hot or as mild as you want; just adjust the amount of red pepper you add.
  • Make it a meal by serving it over rice.
