Ingredients

1 tablespoon olive oil
1 small onion, finely diced
½ lb pancetta, diced (optional)
4-5 garlic cloves, minced
½ cup vodka
1 28 oz can crushed tomatoes
1 tablespoon tomato paste
1 teaspoon salt
¾ cup heavy cream or to taste
1 ½ cup Parmesan cheese, grated
So easy and so good. Any pasta works, but we prefer either gnocchi, rigatoni or penne.

Instructions

1.Heat olive oil in a large skillet. Add onions and sauté until soft. Add garlic and cook for about one minute.
2.Add tomato paste and crushed tomatoes. Stir well. Add the vodka and bring to a simmer to let the vodka cook down, about 4-5 minutes.
3.Stir in the heavy cream and Parmesan and add salt to taste.
4.Add pancetta if using.
5.Serve with your favorite cooked pasta.

Notes

  • So easy and so good. Any pasta works, but we prefer either gnocchi, rigatoni or penne.
  • Speaking of gnocchi – if you are feeling adventurous, try making your own pasta with this gnocchi recipe. Absolutely worth the extra time!
  • If your sauce is tasting too salty, just add a pinch of sugar to balance it out.
