Ingredients

2 tablespoons sesame oil
2 cloves garlic, minced
1 tablespoon freshly grated ginger
4-5 green onions, roughly chopped
1/2 cup shredded carrots
1/2 cup shiitake mushrooms, sliced (optional)
5-6 cups chicken, beef or vegetable broth
1 tablespoon rice vinegar
4 tablespoons soy sauce
1 tablespoon sriracha sauce (more or less, depending on your heat tolerance)
6-8 ounces ramen noodles
4 eggs, soft-boiled
Any protein you want, optional
Big ramen house here. We all know that store-bought ramen is cheap, easy to make and quite delicious. It’s a go-to for my kids in between volleyball, dance and softball.

Instructions

1.Heat sesame oil in large pot over medium heat. Add garlic and cook for about 1 minute.
2.Add broth to large pot. Add the garlic, ginger, green onions, carrots and mushrooms if you're using them, and simmer.
3.Add sriracha sauce, rice vinegar and soy sauce. Stir, and bring to a simmer; let it go for about five minutes. Taste, and adjust heat and taste to your liking by adding more sriracha and soy sauce if needed.
4.Pour broth mixture into blender and pulse until smooth. Return to pot and bring to low boil.
5.Add ramen noodles into the pot of simmering broth and allow to cook, approx. 2-3 minutes, or until cooked and tender.
6.Carefully transfer the soup and noodles to bowls and add any protein you are using. Top with soft-boiled egg, sliced in half, scallions and sesame seeds.
7.HOW TO MAKE THE PERFECT SOFT-BOILED EGG
8.Bring water to a boil in a small saucepan. Add the egg(s), and let them boil for five minutes.
9.While your egg(s) are boiling, prepare an ice bath in a bowl.
10.After the egg(s) have boiled for 5 minutes, place them into the ice bath for about a minute to cool.
11.Lightly crack and roll them on a flat surface. Peel and slice in half.

Notes

  • Big ramen house here. We all know that store-bought ramen is cheap, easy to make and quite delicious. It’s a go-to for my kids in between volleyball, dance and softball.
  • While store-bought is okay for a quick bite, homemade ramen makes for a flavorful hearty meal.
  • Use any protein you want. I honestly usually make ramen when we have leftover pork or chicken and use that as my protein.
  • Toppings: sliced scallions, sesame seeds, shredded carrots, soft-boiled egg
