Ingredients

2 cucumbers, sliced thin
1 cup grape or cherry tomatoes, halved
½ red onion, finely sliced
½ cup crumbled feta cheese
1 tablespoon fresh dill, chopped
1 tablespoon fresh mint, chopped
1 tablespoon fresh basil, chopped
3 tablespoons fresh lemon juice
¼ cup olive oil
Sea salt, to taste
Fresh, light and easy, basically the perfect salad.

Instructions

1.In a medium sized bowl, add the sliced cucumbers, tomatoes, red onion, feta cheese, dill, mint and basil.
2.Add the lemon juice and the olive oil and gently toss together to combine.
3.Add salt and toss again.
4.Top with fresh herbs and serve.

Notes

  • Fresh, light and easy, basically the perfect salad.
  • Do not skip the fresh herbs here, they really make the salad.  You can however substitute any herbs you have on hand such as parsley or cilantro.
  • You can leave the skin on the cucumbers or peel them, whichever you prefer.
  • I use a mandolin to slice both the cucumbers and red onions but please, please be careful if you decide too as well!
  • You can dice the cucumbers if you rather.
  • No lemons? No problem.  You can use red wine vinegar instead of lemon juice.
  • Keep chilled until ready to serve.
