Ingredients

16 ounces pasta
4 chicken breasts
3 tablespoons Cajun seasoning
4 tablespoons butter
2 tablespoon olive oil
1/4 cup onion, finely diced
5 cloves garlic, finely minced
1 1/2 cup heavy cream
1/2 cup grated parmesan cheese
2 tablespoons Italian seasoning
1 cup pasta water
1 tablespoon salt
1 tablespoon black pepper
Creamy Cajun chicken pasta that comes together quick but tastes like it took hours to make. I promise you that there will be no leftovers.

Instructions

1.Cook the pasta al dente, reserve 1 cup pasta water.
2.Season chicken on both sides with 2 tablespoons Cajun seasoning.
3.While pasta is cooking, heat olive and 2 tablespoons of butter in a cast iron skillet.
4.Add chicken to hot skillet and cook on each side for about 3-4 minutes. Once the chicken is cooked through remove and set aside to rest.
5.In the same skillet, add 1 tablespoon butter and olive oil. Add onion and cook for about 3 minutes. Add garlic and cook for an additional minute.
6.Add heavy cream and whisk everything together until smooth.
7.Add Italian seasoning, parmesan cheese, 1 tablespoon Cajun seasoning, pepper and pasta water to skillet and mix well. Add salt to taste.
8.Add cooked pasta to sauce and let simmer for a few minutes.
9.Meanwhile slice the chicken breasts into strips.
10.Serve each bowl of pasta with chicken on top. Enjoy!

Notes

  • Make this, like right now. Be prepared for no leftovers.  This dish will quickly become one of your most requested dishes.
  • There is no such thing as too much garlic, so add more if you want.  Same goes for the Cajun seasoning, make it as spicy as you want.
  • I like to use penne pasta but any pasta you have on hand works.
  • If you don’t have a cast iron skillet you can use whatever you have.
  • Make sure your skillet is hot when you put your chicken in so you get a nice sear on the outside.
  • While the recipe works best with chicken breasts chicken thighs work as well.
  • I like to also season my chicken with salt and pepper but you can just use Cajun seasoning if you prefer.
