Ingredients

½ pound shredded or diced chicken
⅓ cup mayonnaise
¼ cup fresh dill, chopped
Juice from ½ lemon
¼ cup red onion or shallots, finely diced
¼ cup chopped walnuts (optional)
Salt
Pepper
This is one of my favorite things to make for lunch during the week, especially when no one else is home. (I don’t have to share!)

Instructions

1.Add chicken, dill, onion and mayonnaise to medium bowl and mix well.
2.Squeeze lemon juice in and mix.
3.Add salt and pepper to taste and mix everything together.
4.Serve on toasted bread, pita or eat with your favorite crackers.

Notes

  • This, my friends, is one of my favorite things to make for lunch during the week, especially when no one else is home. (I don’t have to share!) I like to eat it right out of the bowl or with whatever crackers I have on hand.  This is one of my oldest favorite snacks after volleyball. ????
  • This is a great recipe for leftover chicken you might have. I usually make it with the pre-cooked shredded rotisserie chicken my grocery store sells, but any kind of chicken will work.
  • Adjust both the mayonnaise and lemon juice to your liking.
  • Feel free to omit the walnuts, but let me tell you, they really amp this chicken salad up!
  • No dill? No problem…any fresh herb like parsley or cilantro will work. I just prefer it with dill.
