- This, my friends, is one of my favorite things to make for lunch during the week, especially when no one else is home. (I don’t have to share!) I like to eat it right out of the bowl or with whatever crackers I have on hand. This is one of my oldest favorite snacks after volleyball.
- This is a great recipe for leftover chicken you might have. I usually make it with the pre-cooked shredded rotisserie chicken my grocery store sells, but any kind of chicken will work.
- Adjust both the mayonnaise and lemon juice to your liking.
- Feel free to omit the walnuts, but let me tell you, they really amp this chicken salad up!
- No dill? No problem…any fresh herb like parsley or cilantro will work. I just prefer it with dill.
