Ingredients

2-3 tablespoons vegetable oil for frying
2 chicken boneless, skinless chicken breasts
1 cup all-purpose flour
2 teaspoons garlic powder
1 cup milk
1 cup panko bread crumbs
8 slices deli ham, cut into 1-inch squares
8 slices deli Swiss cheese, cut into 1-inch squares
2/3 cup mayonnaise
2 tablespoons Dijon mustard

Yum. I cannot stop eating these…the melted cheese and the Dijon dipping sauce...so good.

Instructions

1.In large skillet, heat oil over low/medium heat.
2.Add flour, garlic, salt and pepper to a Ziploc bag. Seal and shake well to mix everything.
3.Cut up chicken into bite-size pieces and add to a medium-size bowl.
4.Pour the milk over the chicken and make sure all the pieces are well-coated.
5.Add the chicken to the flour mixture and make sure all the chicken is well-coated.
6.Add each piece of chicken back into the bowl with the milk and coat.
7.Dip each piece of chicken into the panko breadcrumbs and shake off the excess.
8.Add chicken pieces to the skillet with the hot oil.
9.Cook for about 6-8 minutes per side or until chicken is cooked through and is golden brown.
10.While chicken is cooking, add mayonnaise and Dijon mustard to a small bowl and whisk together until combined. Set aside.
11.When the chicken is done cooking, drain oil from pan and place chicken bites back into pan.
12.Add a slice or two of the Swiss cheese and ham pieces that have been cut into small squares to each chicken bite. Cover the skillet with a lid and cook until the cheese is melted. Place a skewer into each chicken, ham and cheese bite and serve with the Dijon dipping sauce.

Notes

  • I cannot stop eating these when I make them.  The melted cheese and the Dijon dipping sauce are all so good.
  • At the end of the day, you 100% can make these with store-bought chicken bites! Obviously, making your own taste better, but takes more time and effort than popping a bag of chicken bites into the oven!  If you are feeding a large crowd, go ahead and use store-bought ones, just make sure you buy chicken bites and not chicken nuggets!
  • If using store-bought chicken bites, cook as instructed. Once they are cooked, add ham and cheese to each bite and place the baking sheet back into the oven to melt the cheese, about 3-5 minutes.
  • You can make these ahead of time and then pop into the oven at 350° to warm up before serving. Just heat them up for about 6-8 minutes.
