Ingredients

7 – 8 cups of popped popcorn
1 cup butter
2 cups brown sugar
½ cup corn syrup
1 teaspoon salt
1 teaspoon vanilla extract
½ teaspoon baking soda
¼ teaspoon baking powder
Popcorn is a favorite in our house, so much so we have a movie-style popcorn machine in the rec room. ???? My middle basically considers popcorn a food group. Since we have an endless supply, we like to mix it up and make this heavenly caramel popcorn.

Instructions

1.Preheat the oven to 200°. Line a large baking sheet with parchment paper.
2.Place prepared popcorn in a large bowl.
3.Over medium heat, melt butter in medium saucepan. Add brown sugar, corn syrup and salt.
4.Bring to a boil over medium heat, stirring occasionally. Once the caramel begins to gently boil, boil for an additional 2 minutes, stirring constantly.
5.Remove from heat and stir in baking soda and vanilla.
6.Drizzle caramel over popcorn while stirring. Toss until evenly coated.
7.Pour caramel-coated popcorn onto baking sheet and bake at 200°, stirring every 15 minutes for 45 minutes.
8.Remove from oven and let cool. Enjoy.

Notes

  • Pay attention when making the caramel. It’s very easy to burn and will leave a bitter taste.
  • Use as much or as little salt as you like.
  • Wait until it is entirely cooled before breaking it up into pieces.
  • Do you need to bake it? Not technically, but it will taste better if you do. Sometimes, we just can’t wait and eat it without baking it…still delicious but not quite as good.
