Ingredients

1-2 tablespoons olive oil
1 pound ground chicken or ground turkey
½ cup hoisin sauce
4 garlic cloves, diced
1 medium onion, diced
3 – 4 tablespoons soy sauce
2 tablespoons rice wine vinegar
1-2 tablespoons ginger, freshly grated (paste works well, too)
3 green onions, chopped
Salt to taste
1-2 heads butter lettuce
Chopped nuts (any kind will do)
This is a great carpool night meal! It can be kept warm so everyone can enjoy it when they are finally home!

Instructions

1.Heat olive oil in large pan over medium heat. Add your ground meat and cook until all the meat is browned. Add salt to taste. Drain fat.
2.Add onions and cook for about 3-4 minutes.
3.Add garlic, hoisin sauce, soy sauce, rice wine vinegar and ginger and cook for 2 minutes
4.Spoon several tablespoons of the mixture onto the butter lettuce leaf and top it with chopped green onions and nuts.
5.Eat it taco style and enjoy!

Notes

  • This is a great carpool night meal! I generally make it and let everyone eat as they come home from their 1 million activities…okay, it’s just dance and volleyball, but it seems like a million!  This can be kept warm so everyone can enjoy it when they are finally home!
  • You can use ground beef for this or whatever ground meat you have. I actually mix and match whatever I have to make as much as I need for that night.
  • Make sure you make enough! These are delicious and go very fast!
  • You can use any type of lettuce you have handy.
  • Make sure to have extra hoisin sauce to add on top when you are making them.
