Ingredients

1 block cream cheese, softened
2 cups cooked chicken, shredded or diced.
¼ cup ranch dressing
¼ cup blue cheese dressing
¼ cup hot sauce
¼ cup sriracha sauce
12 egg roll wrappers
Vegetable Oil
These are delicious…like do-not-expect-leftovers delicious. Go ahead and make it as hot as you want! Just add more hot sauce and sriracha to taste. Give the blue cheese a chance, but if not, add some extra ranch.

Instructions

1.In a large skillet, heat the cream cheese and chicken until all of the cream cheese is melted.
2.Add the ranch dressing, blue cheese dressing, hot sauce and sriracha. Stir and combine well.
3.To assemble egg rolls, lay out an egg roll wrapper so that it looks like a diamond. Add about 2-3 tablespoons of buffalo chicken mixture to the center. Fold the left and right points of the wrapper in until they touch but do not overlap. Tightly fold the bottom corner up; then roll the egg roll forward over the remaining top corner. Seal the top corner in place by wetting your finger and using that to seal your roll together.
4.FRYING:
5.Add 1 inch of oil to a large skillet or Dutch oven and heat to 350°. If you don’t have a thermometer, you can tell if it’s ready by dropping a little bit off flour into the oil; it should bubble and start to fry.
6.Working in batches, drop egg rolls into hot oil and fry until each side is golden brown, about 1-2 minutes per side.
7.Transfer cooked egg rolls to paper towel-lined plate or baking sheet.
8.Serve with your favorite dipping sauce.
9.AIR FRYER:
10.Lightly spritz the egg rolls on each side with your choice of oil spray.
11.Place egg rolls in an air fryer basket in an even layer leaving space between them for even cooking. You will likely need to work in batches.
12.Cook at 390° for 7 minutes or until golden brown, flipping halfway through cooking.
13.Serve with your favorite dipping sauce.
14.BAKE:
15.Preheat oven to 400°.
16.Place prepared rolls on a parchment-lined baking sheet, seam side down.
17.Bake until golden brown, about 15-20 minutes. Let stand 5 minutes before serving.
18.Serve with your favorite dipping sauce.

  • Don’t like blue cheese dressing? Me neither, BUT trust me when I say it really works in these rolls.  Not sold yet?  Just leave it out and add extra ranch.
  • As much as I would like to say we bake or air fry these to be healthy, we don’t. I mean, we have…we just don’t like them as much as when they are fried!  Personal preference, so live your best life and make them how you like them!
  • Sometimes, if I am feeling fancy, I like to serve them cut open and topped with blue cheese crumbles and chopped green onions.
