- Every year for her birthday, my oldest daughter asks for filet mignon with this blue cheese sauce. It is so easy and tastes so good.
- Save the leftovers; it reheats nicely.
- You can use gorgonzola cheese if you prefer that over blue cheese.
- I always use at least 6 oz of blue cheese, but that’s because my family really likes blue cheese. You can use less for a milder flavor.
- I have added fresh garlic to this in the past, and it’s amazing. If you are going to add garlic, start by melting about 2 tablespoons of butter in the skillet, and then cook your garlic for about 1 minute. Then add the cream, followed by the blue cheese.
