Ingredients

3 tablespoons unsalted butter
1/4 cup flour
1 cup heavy cream or whole milk
1 cup beer of your choice
1 tablespoon Dijon mustard
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon paprika, smoked or regular
1 teaspoon salk
2 -3 cups sharp cheddar cheese, shredded
This cheesy pub style Beer Cheese Dip is ready in less than 15 minutes. Perfect for soft pretzels and pretzel bites.

Instructions

1.In a medium saucepan, melt the butter over medium heat.
2.Add the flour and whisk together for about 1 minute or until it forms a golden brown paste.
3.Slowly add the milk/cream until it is all added. Continue to whisk an additional minute or two until it thickens and is well combined.
4.Whisk in the remaining ingredients, one at a time. Continue to whisk until your dip is smooth and silky. Add additional milk to get it to your desired consistency.
5.Taste and add any additional seasoning as needed.
6.Transfer the cheese dip to a serving dish and enjoy!

  • This creamy cheesy dip is the perfect partner for soft pretzels, pretzel bites or bread! Ready in under 15 minutes with few ingredients.
  • Use any beer you have on hand.  I’ve made it with both light and heavier beers and it is delicious every time.
  • It is 100% worth the extra time to shred your own cheese.  It makes all the difference for this dip.
  • You can mix up the cheeses if you want.  Honestly I use whatever I have on hand and usually mix different  kinds together.
  • The sharper the cheddar the better.
  • Add some cayenne or red pepper flakes if you want to add some heat.
