Ingredients

1 stick unsalted butter softened or 8 tablespoons
1 cup brown sugar
1 cup white sugar
3 - 4 ripe bananas, mashed
2 eggs, beaten
1 ½ cup all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
2 teaspoons cinnamon
1 tablespoon vanilla
1/2 cup chopped walnuts - optional
This banana bread is moist and delicious. A perfect way to use up over ripe bananas!

Instructions

1.Preheat the oven to 350°. Prepare your loaf or muffin pan by using cooking spray or butter to grease them.
2.Using a hand or stand mixer, cream together softened butter, brown sugar and white sugar.
3.Add the mashed bananas and eggs and mix until well combined.
4.In a separate bowl, mix flour, baking soda, salt and cinnamon. Add the dry ingredients to the batter.
5.Add vanilla extract and chopped walnuts if using. Pour into prepared loaf pan. Bake at 350˚F for 50 - 60 min or until a toothpick inserted into the center comes out clean.
6.Let cool on a wire rack.

Notes

  • This recipe is super easy and for sure to be a crowd pleaser.
  • I usually make this into banana muffins. Follow the direction except use a greased muffin sheet and bake about 25 minutes or so.  I also like to use mini loaf pans and cook them for about 30-35 minutes.
  • Over ripe or even brown bananas work best for this.
  • You can add raisins, walnuts or chocolate chips to the batter to mix things up a bit – the possibilities are endless!
