Ingredients

10 slices of
bacon
1 cup chopped white onion
1/3 Cup brown sugar
3 tablespoon balsamic vinegar
¼ cup water
Pinch of salt
Goodness, absolutely amazing.  I mean honestly, I could eat this by the spoonful.

Instructions

1.Chop bacon into about ½ inch pieces. In a large cast iron skillet, cook bacon until almost crispy but still slightly chewy. Using a slotted spoon remove the bacon pieces and place on a paper towel.
2.Drain all but about 2 tablespoons of the bacon grease from the pan.
3.Add onions to the skillet and saute over medium until soft, about 10 minutes or so.
4.Add brown sugar, balsamic and water to the onion mixture and cook until it turns into a syrup-like texture, about 25-30 minutes.
5.Add bacon and continue to cook for about 5 minutes and stir until well combined.
6.Remove from heat, add salt sugar to taste.
7.Use immediately or store in the refrigerator for up to one week.

Notes

  • Goodness, absolutely amazing.  I mean honestly, I could eat this by the spoonful.
  • Sweet and savory and a bacon lover’s dream!  You can use this on almost anything. Top off your burger, use it as a dip, throw it on a charcuterie board, and good lord please add it to your grilled cheese.  The possibilities are endless!!
  • Cream cheese, definitely eat this with cream cheese and crackers.
  • You can use any type of onion.  I like using a white onions but red onions work great too.
  • If you are wanting a smoother texture you can use an immersion blender to get the consistency you are looking for.
  • Add additional balsamic vinegar if you are looking to tone down the sweetness.  I actually use balsamic glaze a lot too.
